Long before modern limes took over our shelves, Bijora — a wild lemon with intense flavor and long shelf life — was the hero of Indian pickles, especially in Gujarat and Maharashtra.
Our grandmothers would sun-dry bijora slices, grind garlic, red chili, and salt by hand, and soak them all in freshly pressed groundnut oil. This process created a powerful, preservative-free achaar that lasted for months and paired with anything, from dal-chawal to theplas.
