📖 The Traditional Story Behind Gud Bijora
In Gujarat and parts of western India, Bijora Achaar with Gud was a seasonal ritual, particularly during the winter months. The sharp sourness of wild bijora was softened by gud, and enhanced with a rich blend of whole and ground spices. Families would make this pickle in large batches to enjoy with theplas, bhakri, or simple rice meals throughout the year.
